Toffee apple & honeycomb waffle

I love a good waffle and this is the perfect brunch or dessert. The waffles have no butter or sugar in them and with the apples this makes for a not so unhealthy dish, to save the regrets. You will need a waffle maker for this- you can get cheap ones online, but if not you can just buy them ready made.

Ingredients

For the waffle:

  • 2 eggs
  • 250g plain flour
  • 400 ml milk
  • 100ml rapeseed oil
  • 1 tbsp agave nectar/ sugar (optional, if you want it sweet- I usually put none/ very little as the dish becomes sweet with the toffee sauce)
  • 2 tsp vanilla extract
  • 1 tsp cinnamon powder
  • 4 teaspoons baking powder
  • Spray oil (I use frylight coconut)

For the cinnamon apples

  • Small knob of butter
  • 2 apples, peeled and sliced
  • 1 tbsp agave nectar
  • 1 tsp cinnamon powder
  • 1 tsp vanilla extract
  • 2 tsp water

For the decoration

  • 1 crunchie bar, smashed into small pieces
  • Toffee sauce (I got this from a bottle from the supermarkets)
  • Thyme (optional, just makes it look pretty)
  • Icing sugar (to sprinkle over, optional)

Method:

  1. Make the apples by putting a knob of butter in a pan.

  3. Cook on a low heat with the lid on for about 5- 10 minutes until the apples are soft. Make sure you keep stirring to ensure the pan does not burn.
  4. Heat up the waffle maker.
  5. Mix all the waffle ingredients together in a bowl.Processed with VSCO with c1 preset
  6. Spray the waffle maker with spray oil.Processed with VSCO with c1 preset
  7. Pour onto the waffle maker and cook for about 5 minutes until golden.Processed with VSCO with c1 presetProcessed with VSCO with c1 preset
  8. Once done, serve by topping the waffles with the apples, crunchie bar pieces, toffee sauce and thyme.Processed with VSCO with c1 presetIMG_0540
