This is a great healthy alternative to a dessert or cake and can be eaten for breakfast/ brunch or after a meal. You can also use ricotta cheese instead of mascarpone or basil instead of mint, to try something different.
- 2 pieces of brown toast (lightly toasted)
- A few tbsp mascarpone cream
- Strawberries, washed and cut
- A squeeze of honey
- A handful of mint
- Spread the mascarpone on the toast.
- Add the strawberries and mint.
- Squeeze over some honey.
