Tropical fruit kebabs with ginger & lime syrup

Ingredients: (makes 5 skewers)

  • 1 pineapple, chopped (see below)
  • 1 mango, chopped (see below)
  • 1 passion fruit, to garnish (optional)
  • 5 wooden skewers

For the syrup:

  • A few mint leaves, finely chopped
  • 3 tbsp lime juice
  • 1 tbsp agave nectar (if you do not have this, then you can just use 1 tbsp of normal sugar or honey)
  • A small piece of fresh ginger, grated

Method:

  1. To cut the pineapple,I find the best way is to firstly cut the green top off the pineapple, using a sharp knife.
  2. Then cut down the sides of the pineapple, removing the ‘skin’.IMG_9618
  3. If you see any brown circles still left into the pineapple flesh, remove these with a smaller knife.
  4. There is a core in the middle of the pineapple, so you need to cut around this core. Discard the core.IMG_9622
  5. Cut the remaining pineapple into chunks.IMG_9624
  6. I find the best way to peel the mango, is to use a regular peeler.
  7. The mango has a middle stone, so cut around this stone, using a small knife and cut the mango into cubes.
  8. Get the skewers, and thread alternating pineapple and mango onto the skewers, watching out for your fingers.IMG_9633
  9. Now make the syrup. Just add all the syrup ingredients together in a pan and heat up until warm. IMG_9635
  10. Drizzle the syrup over the fruit.
  11. Garnish with the passion fruit and mint leaves.IMG_9650
  12. I think these taste better chilled, so you can put them into the fridge or eat them straight away.

If you wanted to make this into a warm dessert, then pre soak the skewers for a few hours before use, then when the fruit is on the skewers, grill the fruit on a griddle pan until charred. Then eat warm with ice cream.You could also drizzle the fruit with a rum such as Malibu. If you are feeling adventurous you could also add red chilli to the mix.
