Ingredients (serves 2)
- Olive oil
- Coconut oil (optional)
- 2 cod fillets (without skin is better)
- 4 pieces of parma ham or prosciutto
- 2 tbsp green pesto
- 1 pack vine tomatoes
- Balsamic vinegar or balsamic glaze
- 1 pack green beans
- 3 garlic cloves, chopped
Method:
- Preheat the oven to 200 degrees C and line a baking tray with baking parchment. Oil the baking parchment with olive oil.
- Lay out the parma ham. Overlap 2 pieces for each piece of cod.
- Place the cod onto the parma ham.
- Spoon 1tbsp of pesto on each cod fillet and season.
- Wrap over each end of the parma ham to make a parcel. Put in the oven for 15-20 minutes.
- Drizzle the tomatoes in olive oil and balsamic vinegar/ glaze. Season.
- Put the tomatoes into the oven 10 minutes before the cod is due to come out.
- Boil the green beans in boiling water for 5 minutes to pre cook them.
- Heat some coconut oil/ olive oil in a pan. Add the garlic and drained green beans. Cook on a medium heat for a few minutes.
- Put together on a plate. Decorate with balsamic glaze.
