Ingredients: (serves 4)
- 3 tsp sesame oil
- 1 pack 500g lean pork mince (I got 5% fat). You could also use beef or turkey mince or soya mince/ diced veg (eg. mushrooms) for a veggie option.
- 1 red or green chilli, chopped
- 4 garlic cloves, chopped
- 1/2 inch of ginger, grated
- 1 tsp brown sugar
- 2 tsp fish sauce
- 2 tsp lime juice and some of the zest, grated
- 1 tsp soy sauce
- 1 bunch spring onions, chopped
- 1 pinch chilli flakes, optional
- 4 gem lettuce hearts
Dipping sauce:
- 1 tsp sugar
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp olive oil
- 1 tsp fish sauce
- 2 tsp lime juice
- chopped coriander
- chopped red chilli
Method:
- Heat up 2 tsp of the sesame oil in a pan.
- Add the mince to the pan and cook until brown and fully cooked. Ensure that you stir often to stop the mince from sticking. Add some salt and pepper to the mince.


- Drain the mince from the pan to remove the excess fat. Put the mince in a bowl and leave to the side.
- In the same pan as before, add 1 tsp more of sesame oil.

- Add the chilli, ginger and garlic. Fry for a few minutes.

- Add the brown sugar to the pan to melt.
- Return the mince to the pan.
- Add the fish sauce, lime juice, lime zest, soy sauce and stir together. Cook further for a few minutes.
- Add the spring onions and chilli flakes.

- Separate the leaves from the gem lettuce. Using a spoon, put the mince mixture into the lettuce wraps. Alternatively, you can get everyone to make their own, DIY style.

- Stir all the ingredients together for the dipping sauce. Taste the sauce. If it needs to be sweeter- add more sugar, saltier- add more fish sauce or soy sauce, more sour-add more lime juice, hotter- add more chilli. Sweet chilli dip is also nice for a dipping sauce too.
- To eat dip the lettuce wraps in the sauce, enjoy!
