These little lettuce wraps are packed full of flavour yet cutting out on the carbs. You can use chicken mince or pork mince traditionally but I find that this mixture of mushrooms and tofu is just perfect whilst being healthier too.
Ingredients:
⁃ 500g of mince meat (can use chicken, pork or turkey) or today I used 250g of scrambled up tofu and 250g chopped mushrooms (I prefer chestnut mushrooms)
⁃ 1 tbsp sesame oil
⁃ 4 cloves of garlic, finely chopped
⁃ 1 large piece of ginger, grated
⁃ 3 tbsp hoisin sauce
⁃ 1 tbsp oyster sauce/ alternative
⁃ 1 tbsp Siracha
⁃ 1 tbsp rice wine vinegar
⁃ 1 tbsp soy sauce
⁃ Pinch of sugar
⁃ Sweet chilli sauce (to serve)
⁃ Gem lettuce (to serve)
⁃ Spring onions (to decorate)
⁃ Sesame seeds (to decorate)

Method:
1. Add the sesame oil, garlic and ginger to a pan and stir until fragrant.

2. Then add in the mince or tofu and mushrooms. Stir until cooked.

3. Add in all the sauce ingredients and stir for a few more minutes.


4. Serve by placing some mixture on a lettuce piece. Drizzle over the sweet chilli sauce, spring onions, sesame seeds and a little more sesame oil.
