Strawberry honey toast

This is a great healthy alternative to a dessert or cake and can be eaten for breakfast/ brunch or after a meal. You can also use ricotta cheese instead of mascarpone or basil instead of mint, to try something different.

Ingredients:

  • 2 pieces of brown toast (lightly toasted)
  • A few tbsp mascarpone cream
  • Strawberries, washed and cut
  • A squeeze of honey
  • A handful of mint

Method

  1. Spread the mascarpone on the toast.
  2. Add the strawberries and mint.
  3. Squeeze over some honey.
